Not the useful noise. She trusted the useful noise. The chop of the dull tomato knife against the prep board in the pass-through. The cough and settle of the old espresso machine. The little weather of plates lifted from rubber trays and set down with two fingers because nobody on morning shift had the luxury of slamming anything. Useful noise meant a system still believed in itself. This was different. A metal rattle up in the hood vent. A wet clicking in the reach-in cooler by the pie case. The fryer, though nobody had turned it on yet, gave off one thin complaint like a mosquito caught behind glass. Mara stood at the register with the daybook open and a pencil tucked in the knot of her hair. The first order tickets already hung in a white fringe above the pass. Two lumber men wanted eggs over easy and wheat toast. Mrs. Pollard wanted oatmeal with brown sugar on the side because she liked to act as if she still had…
